Lent and Summer Recap

The last couple weeks of Lent were spent with family, trying lots of Edinburgh’s vegan offerings and cooking through a lot of favorites. Due to Covid their stay was extended a bit and I never got the chance to wrap it up. And then summer came and I never got around to writing about anything. I cannot remember everything we ate but I will sum it up by saying we found the experience easier this year, and even going out veggie was fantastic. So far we’ve been keeping up mostly meat-free and investing in high quality local meat where possible. In May we started getting bi-weekly veg boxes from Phantassie Farms, who provide local organic fruit and veg from their plot and other local suppliers wherever possible. The veg has been gorgeous and it is easier to plan around than I had anticipated. But sometimes the curve balls are nice, and it can be good for the creative juices to be jolted from the routine. I have had to opportunity to cook with some veg I haven’t had experience with before, like fresh fava beans and some varieties I can find in the regular shop here like chiogga beetroot. Soon I will write about how I plan around the veg box.

For now I am seriously looking forward to autumn. I of sick of summer around mid-July this year, so it has felt like a slog! I’ve had a hard time this season, and even reveling in fresh strawberries and tomatoes couldn’t shake me into the summer mood for some reason. Looking forward to the drizzle creeping in, and soup season!
