Lent 2023, Week One

The first few days of LEnt have gone well. We had a bit of a fool’s spring, some mild days and a carpet of crocuses and snowdrops everywhere you look. Temperatures have dipped again, and I keep seeing warnings of an ‘Arctic Blast’ headed our way. While the blooms have me in the mood for spring, a good blanket of snow does sound rather cosy. Though I am unsure if this blizzard will materialise! We shall see.


To kick off on Ash Wednesday we had Maangchi’s Spicy Braised Tofu, an eternal favourite of ours. It makes excellent leftovers and we never get sick of this dish. Thursday was supposed to be a little trip to Spain with tortilla de patatas, marinated olives, salad, and crusty bread. Unf


ortunately, my pan was a bit too cold at the start and the tortilla stuck and ripped apart! Pizza to the rescue. On Friday Matt whipped up coconut shrimp and I made the Asian-inspired slaw from Salt Fat Acid Heat, a favourite pairing of ours. Saturday we dithered a bit, ultimately going out for vegetarian ramen at Maki & Ramen and pulling some minestrone out of the freezer for dinner.
