Cardamom Snickerdoodles

These are super simple and just fantastic for a grey, gloomy day. I think they’re just as cosy and a little more interesting than a classic cinnamon snickerdoodle. Perfect with a cup of tea!





Makes approximately 20-24 cookies


Cookie dough:

½ cup (113g) unsalted butter

¾ cup (150g) sugar

1 large egg

1 tsp vanilla extract

1 tsp baking powder

½ tsp salt

1 ⅓ (160g) cup flour


Coating:

3 tablespoons sugar

2 tsp ground cardamom


  1. In a small bowl whisk together the flour, baking powder, and salt.

  2. In a mixing bowl beat together the sugar and butter until smooth.

  3. Add the egg and vanilla and continue mixing until the mixture is smooth.

  4. Add flour mixture and mix until flour is incorporated. The dough will be very sticky.

  5. Turn out the dough onto plastic wrap and form into a small disk and wrap tightly. Place in the fridge for 30 minutes.

  6. Meanwhile preheat the oven to 375F (190C) and line baking sheets with parchment paper.

  7. Combine the sugar and cardamom into a small bowl

  8. Once the dough is chilled begin rolling about 2 tsps of dough into balls. Roll each ball in the cardamom sugar and place on prepared sheets. Give each cookie plenty of room to spread!

  9. Place the baking sheet in the oven and bake for 8-11 minutes (8 minutes for soft cookies, 11 minutes for crunchy cookies). Remove and cool on a wire rack.
